Coconut Rice

Ingredients:

  • Grated coconut - 3/4 cup

  • Finely diced coconut pieces - 1 tsp

  • Split urad dal - 1/2 tsp

  • Gram Dal - 1 tsp

  • Mustard Seeds - 1/2 tsp

  • Curry Leaves - 4 or 5

  • Dry Red Chillies - 2 or 3

  • Salt - to taste

  • Rice - 2 cups

  • Oil - 3 tbsp

Method:

Cook the rice separately adding 4 cups water and allow to cool. In a pan, heat the oil, splutter the mustard seeds, then add the urad dal, gram dal, chillies and curry leaves and fry till the dals turn a slight brown. Then, add the grated coconut, coconut pieces and salt and fry for a few minutes on low-medium heat. Then add this mixture to the rice and mix thoroughly. Optionally, can add roasted cashews to this.
